Deviled Ham Spread



16 ounces Edwards Surry Ham or traditional salted country ham

2 1/2 cups Mayonnaise, preferably Duke’s

1/2 cup Pickle Relish, Mt. Olive

4 Tbls Fresh Sage, stemmed & finely chopped

2 Tbls Shallots, peeled and minced

4 tsp Black Pepper, fresh ground

1/4 cup Fresh Chives, sliced fine

2 Tbls Lemon, juice of

2 Tbls Worcestershire Sauce, Lea & Perrins

Grind ham in food processor to a fine crumbly texture.  Place all ingredients, except ham, in a Kitchen Aid bowl and mix with paddle attachment. A counter mixer will work or a hand mixer on a lower speed.

Slowly mix in ham and taste for seasoning. Serve with toast, crackers or as finger sandwiches with a watercress garnish.
