Bluefin Tuna and Cucumber Canapé

 

For the dish:
  • 2 lbs of Toro diced 1/4 inch (If Bluefin tuna belly (Toro) is not available, use the best tuna you can find
  • English cucumber sliced 3/8 inch thick
  • Hawaiian red coarse finishing salt
For the marinade:
  • 4 oz sweet chili sauce
  • 4 oz sweet soy sauce
  • 1 oz pomegranate molasses
  • 1/2 c chopped scallion
  • 1/4 c chopped Thai basil
  • 1/8 c chopped cilantro
  • 1 clove garlic, minced
  • 1/4 c fresh ginger, minced
  • 1/4 c rice wine vinegar
  • 3 T sesame oil
  • 1 T sesame seed
  • 2 oranges, zested and juiced
  • 2 limes, zested and juiced
Mix marinade with Toro for 20 minutes.
Spoon on top of cucumber slice.
Sprinkle with finishing salt.
